The Role of Air in Produce Deterioration:
• Respiration:
Fruits and vegetables continue to respire even after harvest. This respiration process provides energy for maintaining cellular functions but also leads to the breakdown of carbohydrates, fats, and proteins. Increased respiration rates can cause a faster depletion of essential nutrients, loss of texture, and a decline in overall quality.
• Ethylene Production:
Certain fruits, such as apples, bananas, and tomatoes, release a natural plant hormone called ethylene, which acts as a ripening agent. While ethylene is beneficial for initiating the ripening process, its accumulation in a closed environment and can hasten the ripening and subsequent decay of nearby produce, particularly ethylene-sensitive items like leafy greens or berries.
